I don't think it's so much about "not killing" but rather unnecessary killing or reducing the amount of suffering one causes. There is (allegedly) enough options using soy, whey and other products to get the protein one needs. Mind you I myself am not a vegetarian and don't plan on becoming one. But I am somewhat involved with environmentalist efforts and know enough vegetarians to know what the general idea is. It is not some unrealistic expectation or misunderstanding of nature. It's merely doing one's part to minimize what they see as unnecessary suffering. Think of it like recycling. No one thinks their own recycling efforts are going to change the world. It is more about doing one's part.
